Anyone know the stock mounting height from roof line to the center of the rear view mirror? Thanks in advance.

It’s a glue on mirror.  Place it where it gives you a good view to the rear but doesn’t obstruct your passenger side forward view, clears the sun visors, and, doesn’t  have you constantly bashing your head on entry.  You’ll find it is a very specific location with little latitude.

Lastly, make you use a mirror with a “dimming” function as everyone’s low beams are high beams when they are following a Europa.

If a glue on mirror is in the wrong location can it be removed without hurting the windshield to be relocated?

If it's like mine (which I think is original and non-dipping) you can slacken then screw into the mounting pad on the screen and rotate the arm.  That allowed me to adjust the mirror so it was suitable for me, without having to remove the pad and reposition it. Failing that I would imagine you could carefully remove the glue from under the pad using a glass scraper.

I believe acetone dissolves the glue. I would also try to get a razor blade underneath.

So long as I don't break the windshield.

It's not easy to break the windshield with a razor blade!  :)
